These 11am KOs are hell on those of us who take tailgating as seriously as the game.
In the spirit of Wayne's World, I share with you my Cracker Barrel Knock-off Hashbrown Casserole.
1 32 ounce bag of frozen shredded hashbrown potatoes
1 pint sour cream
1 onion finely chopped (I sub green onions for the color)
2 cups + some for topping if desired Shredded extra sharp cheddar cheese
1 stick butter
1 can cream of chicken soup
1/2 tsp pepper
dash of garlic salt
Combine all ingredients, clump in a 9x13 casserole dish, top with a handful more of cheese and bake at 350 for 45 minutes or so.
If you like the crunchy crust, leave off the shredded cheese on top. If you like it extra crunchy, smash up some corn flakes and sprinkle on the top before baking.
If you mix this stuff up ahead of time, all you have to do in the morning is dump in in the casserole dish and bake.
You can also add some meat, which I will be doing with some diced country ham. Leftover chicken or bacon work well. I think sausage would be good but I haven't tried it.
